Technological University in Adygea has patented a new beverage made from goat’s milk

Created by scientists of the Maikop State Technological University of Adygea, a sour milk drink based on goat’s milk and whey has been granted a patent and can now be produced in industrial-scale volumes, said Marziyat Gasheva, an associate professor at the Department of Food Technology and Catering at the university.

«We have patented a new fermented milk of mixed fermentation based on goat’s milk and whey, which is used in the production of the brand of the republic — Adygei cheese. This natural, environmentally friendly product has been named «k'yundysu», which is translated from Adyghe language as «sour whey», she said.

The composition of the drink, in addition to goat’s milk and whey, includes salt and starter cultures, Hasheva added. The taste of the drink reminds of kefir as well as other oriental drinks based on mixed fermentation — ayran and tan.
